Well actually, it does!
A creamy coconutty bar with a layer of raspberry jam all dipped in luxurious dark chocolate & cacao mix - these raspberry bounty bars are like little bites of heaven, plus they're the perfect for the festive season!!

Ingredients:
For the coconut filling:

  • 2 cups shredded coconut
  • 1/2 cup cup natural yoghurt (or coconut cream)
  • 2 scoops collagen powder
  • 1/4 cup maple syrup
  • 3 tbsp coconut oil (fractionated)
  • 1 tsp vanilla
  • A pinch of salt

For the raspberry chia layer:

  • 200g raspberries (fresh or frozen)
  • 1 1/2 tbsp maple syrup
  • 1/2 tbsp lemon juice
  • 2 tbsp chia seeds

For the chocolate coating:

  • 100g ceremonial cacao paste
  • 100g of 75% dark chocolate


Method:

  1. Add the shredded coconut, yoghurt, collagen powder, vanilla, coconut oil and maple syrup to a large bowl.
  2. Mix until combined then use your hands and then shape into small bars or balls.
  3. Place these on a large plate lined with baking paper to set in the freezer for a couple of hours.
  4. Prepare the raspberry chia layer: Place the raspberries, maple syrup and lemon juice in a small sauce pan. Cook over a medium heat while softening the raspberries with the back of a wooden spoon.
  5. Once you have a sauce like consistency, take off the heat and mix in the chia seeds. Set to one side and allow to cool completely.
  6. Once cooled, top the coconut bars with the raspberry chia sauce. Let thee set enough to slice into.
  7. Melt the dark chocolate and allow to cool slightly so it's not piping hot when you coat the bars.
  8. Coat each bar in your chocolate mix and pop back in the freezer to set for about half an hour.
  9. Top with a sprinkle of sea salt, and enjoy the deliciousness of each bite.

We prefer to store these in the freezer in an airtight container, and take them about 10-15 minutes before serving so they soften slightly.
